Noël avec une touche de français
Dans mon monde de pâtisserie, les pâtisseries françaises sont considérées comme la pièce de résistance, celles qui sont à la fois délicieuses et astucieusement créées. Grâce au Great British Bake Off et au confinement covid, j'ai expérimenté et appris à réaliser les fameux croissants et pâte feuilletée, et d'autres comme le Gâteau St. Honoré et la Tarte Tropézienne.
Pour Noël, c'est le croquembouche, aussi connu sous le nom de tour de profiterole, qui est la tradition française. Comme de nombreuses pâtisseries françaises, l'élégante simplicité de son apparence repose sur les subtilités du savoir-faire et du savoir-faire boulanger.
Voici où mon ami et sa fille en ont fait un avec moi pour Noël en République tchèque.
Ce qui est amusant pour moi en cuisinant avec eux, c'est que je peux pratiquer le tchèque avec elle, pendant que son père m'aide. Cuisiner avec eux deux a été une merveilleuse occasion pour moi de me souvenir et d’utiliser encore et encore des mots et des phrases simples. Voici donc la liste des noms et verbes communs et la recette pour votre plaisir tant au rayon langue qu’en pâtisserie.
Verbes et noms communs
whisk together the whole eggs and cornstarch = fouetter ensemble les œufs entiers et la fécule de maïs
combine milk and sugar = mélanger le lait et le sucre
until it barely simmers, when steam is coming off the surface = jusqu'à ce qu'il frémisse à peine, lorsque de la vapeur s'échappe de la surface
add the milk mixture = ajouter le mélange de lait
pour it back into the saucepan = remettez-le dans la casserole
until it becomes thick = jusqu'à ce qu'il devienne épais
stir in the butter, vanilla and salt = incorporer le beurre, la vanille et le sel
until all the butter melts = jusqu'à ce que tout le beurre fonde
pour the mixture into a large bowl = versez le mélange dans un grand bol
directly cover the SURFACE of the pudding = couvrir directement la SURFACE du pudding

A piping bag is a cone shaped plastic bag with the tip barely cut off. = Une poche à douille est un sac en plastique en forme de cône dont le bout est à peine coupé.
add water and butter = ajouter l'eau et le beurre
bring it to a simmer = portez-le à ébullition
until the dough pulls away from the sides of the saucepan = jusqu'à ce que la pâte se détache des parois de la casserole
until a thin layer forms on the bottom of the saucepan = jusqu'à ce qu'une fine couche se forme au fond de la casserole
add one egg at a time = ajouter un œuf à la fois
until it reaches the right consistency = jusqu'à ce qu'il atteigne la bonne consistance
The right consistency is when it slowly comes off the mixing spoon or spatula. = La bonne consistance est lorsqu'elle se détache lentement de la cuillère à mélanger ou de la spatule.
fill the piping bag with the choux pastry = remplir la poche à douille avec la pâte à choux
Squeeze the pastry onto the parchment paper in a circular motion to make small discs with a peak in the middle. = Pressez la pâte sur le papier sulfurisé en effectuant des mouvements circulaires pour former des petits disques avec un pic au milieu.
The dough will puff up into a ball, so you don’t need to try and make balls with the choux pastry. = La pâte va gonfler en boule, vous n’avez donc pas besoin d’essayer de faire des boules avec la pâte à choux.
wet your finger and smooth the peak of each disc = mouillez votre doigt et lissez le sommet de chaque disque
put the baking tray in the oven = mettre la plaque à pâtisserie au four
let them cool to room temperature = laissez-les refroidir à température ambiante.
poke a hole in the bottom = faites un trou dans le fond
pour the creme diplomat filling into another piping bag = verser la crème diplomate dans une autre poche à douille
with a very small nozzle (either the piping bag is cut at the bottom or use a piping nozzle) = avec une toute petite douille (soit la poche à douille est coupée au fond, soit utiliser une douille à douille)
squeeze the creme diplomat into each ball = presser la crème diplomate dans chaque boule
until you feel the ball expand with the filling = jusqu'à ce que vous sentiez la balle se dilater avec le remplissage
use the caramel to coat the balls = utiliser le caramel pour enrober les boules

let it become a light medium golden brown = laissez-le devenir un brun légèrement doré moyen
remove from heat = retirer du feu
prepare a plate for assembling the tree = préparer une assiette pour assembler le sapin
get gloves and tongs = prends des gants et des pinces
make rings of balls with the caramel on the bottom = faire des ronds de boules avec le caramel au fond
dip the top and one side of every ball = tremper le dessus et un côté de chaque balle
set it on its side to make a large ring = placez-le sur le côté pour faire un grand anneau
continue making smaller rings = continuez à faire des bagues plus petites
until the tree is finished = jusqu'à ce que l'arbre soit fini
put a fork into the caramel = mettre une fourchette dans le caramel
remove the fork = retirer la fourchette
heat it up a little = fais chauffer un peu
wave the caramel threads around the cone = agiter les fils de caramel autour du cône
serve immediately = sers immédiatement
refrigerate for up to 6 hours or more = réfrigérer jusqu'à 6 heures ou plus
pour confectioners’ sugar = verser le sucre glace
whisk the ingredients on a high speed = fouetter les ingrédients à grande vitesse
Note: When lifting the whisk up off the icing, the icing should slowly drizzle down and smooth out within 5-10 seconds. You don’t want it to be too thick, so if need be, add 1 Tablespoon of water at a time. Or if it’s too thin, add more powdered sugar. = Remarque : lorsque vous soulevez le fouet du glaçage, le glaçage devrait lentement couler et se lisser en 5 à 10 secondes. Vous ne voulez pas qu’il soit trop épais, alors si besoin, ajoutez 1 cuillère à soupe d’eau à la fois. Ou si c'est trop liquide, ajoutez plus de sucre en poudre.

Ingredients and Directions
The ingredients below are for a half-size which makes 40-50 balls. To make a larger one, just double the recipe.
Ingredients
Creme Diplomat (cream filling):
400ml milk
4 egg yolks
80g caster sugar
40g cornflour or cornstarch
Choux (profiterole balls):
Preheat your oven to 200C (fan assisted)
200 ml water
30 g sugar
3 g salt
80g butter
100g flour (all purpose, in CZ use hladka mouka)
4 Eggs
Caramel (to assemble)
With a child, I choose to use a frosting instead of a caramel because of how hot the caramel is when assembling the balls in to a tree,:
250ml water
450g white sugar
Frosting (to assemble and use to decorate, like in the photo).
2 cups (240g) sifted confectioners’ sugar
1 egg white
4–5 Tablespoons room temperature water
Directions

Creme Diplomat, Filling for the Profiterole Balls
Profiteroles are made with a choux pastry. But, you make the filling first, because it needs to chill in the refrigerator. You can make this a day in advance, too.
In a medium bowl, whisk together the whole eggs and cornstarch.
In a large saucepan or medium deep pan, combine milk and sugar. Use medium heat until it barely simmers, when steam is coming off the surface.
Add the milk mixture SLOWLY to the egg mixture and whisk very fast. You do this, so you don’t cook the eggs.
After all of the milk mixture is combined with the egg mixture, then pour it back into the saucepan or medium deep pan.
Continue cooking over medium heat until it becomes thick. Be patient, it might take up to 5 minutes.
Quickly remove from the heat and stir in the butter, vanilla and salt until all the butter melts.
Pour the mixture into a large bowl and directly cover the SURFACE of the pudding with a plastic wrap.This keeps the entire surface soft.
Put in the refrigerator to cool completely and thicken.
Profiterole Balls
Preheat the oven to 425ºF (220º C).
Line baking sheets with parchment or silicon.
Get a piping bag ready. A piping bag is a cone shaped plastic bag with the tip barely cut off. You will put the choux pastry in the piping bag and make small balls (see video).
Combine flour, sugar and salt into a medium bowl.
Add water and butter to a medium saucepan and bring it to a simmer. Then quickly add the flour mixture and stir quickly. Keep stirring until the dough pulls away from the sides of the saucepan and forms a ball. Continue doing this until a thin layer forms on the bottom of the saucepan to ensure that much of the water is out of the dough.
Remove from the heat and add one egg at a time until it reaches the right consistency. The right consistency is when it slowly comes off the mixing spoon or spatula. You may not need all four eggs.
Fill the piping bag with the choux pastry. Squeeze the pastry onto the parchment paper in a circular motion to make small discs with a peak in the middle. The dough will puff up into a ball, so you don’t need to try and make balls with the choux pastry.
After you’ve filled the baking sheet, wet your finger and smooth the peak of each disc so it’s smooth.
Put the baking tray in the oven and bake for 10 minutes, then reduce heat to 350ºF (180ºC). Bake for up to 10 minutes, but watch them. You only want the balls to get golden brown.
After you finish baking all the balls, let them cool to room temperature.
Poke a hole in the bottom of each ball.
Pour the creme diplomat filling into another piping bag with a very small nozzle (either the piping bag is cut at the bottom or use a piping nozzle).
Squeeze the creme diplomat into each ball until you feel the ball expand with the filling.
Caramel or Frosting to Make a Tree
To make a tree with caramel:
Decide if you want to use the caramel to coat the balls and also to assemble them into a tree. Or, just to use the caramel for assembling the tree.
In a medium saucepan, combine sugar, water and cream of tartar (optional). Put on medium heat and let sugar dissolve and simmer. DO NOT STIR. Let it become a light medium golden brown and remove from heat. It will darken quite quickly so watch it closely. A darkened caramel will taste burned and bitter.
Prepare a plate for assembling the tree with the balls, and get gloves and tongs, if possible. You will make rings of balls with the caramel on top, if desired, and for sure on one side so the balls stick together.
For the first ring, wearing gloves and using the tongs, if possible, dip the top and one side of every ball. Set it on its side to make a large ring. Continue making smaller rings until the tree is finished.
When the cone is finished, put a fork into the caramel and remove the fork to see if it makes threads. If the caramel is too cool, heat it up a little. If the caramel makes threads, then quickly wave the caramel threads around the cone.
Serve immediately or refrigerate for up to 6 hours or more.
To make a tree with frosting (which is almost the same as for the gingerbread house):

Pour confectioners’ sugar and 9 tablespoons of water into a large bowl.
With a hand mixer, whisk the ingredients on a high speed for 1.5 – 2 minutes. Note: When lifting the whisk up off the icing, the icing should slowly drizzle down and smooth out within 5-10 seconds. You don’t want it to be too thick, so if need be, add 1 Tablespoon of water at a time. Or if it’s too thin, add more powdered sugar.
For the first ring, wearing gloves and using the tongs, if possible, dip the top and one side of every ball. Set it on its side to make a large ring. Optional: decorate each ball while the frosting is wet with other candy decorations (like in the photo above).
Continue making smaller rings until the tree is finished.
Créer un croquembouche, c'est un peu comme apprendre une nouvelle langue : un défi, mais incroyablement gratifiant. Vous pouvez développer vos compétences linguistiques avec autant de soin que vous créez la tour de profiterole, phrase par phrase, en compagnie de vos amis et de vos proches.
Ce Noël, laissez votre croquembouche être le symbole du doux mélange des arts culinaires et linguistiques. Avec chaque mot ou phrase pendant la cuisson, vous superposez votre apprentissage de la langue, tout comme les délicieuses boules pour fabriquer l'arbre.
